honey from ling heather, a glorious and unusual honey. ling is a plant of aciD lands and of the heaths and moors it can be found growing on the black mountains at very high altitudes the honey is quite unlike any other being a thixotropic gel, i.e. it can be turned into a fluid by stirring but returns to a gel again when left alone and it has an aroma and flavour all of its own , it is truly a glorious honey.
